About the Coffee

Chances are you found out about our curious beans from a friend of a friend of a friend. If you buy a bag of our beans, you’re already taking your first step towards a better cup of coffee. Our beans are roasted mere days before they ship. We try to time it so you have your beans in that sweet spot of 3-5 days after roasting. If you’re planning on drinking your coffee later, let us know and we’ll ship you that day’s roast. Your coffee is at it’s best up to a month after roasting. Some people will push it two months. And we’ll confess to drinking coffee that’s sat around for over a year. Yes. We will drink bad coffee. Bad coffee is still better than no coffee.

Don’t store your beans in the fridge or freezer. Our one-way vacuum bag is perfect for keeping your coffee fresh. It lets the coffee breathe (or degas). Keep it in a cool, dry place. Your taste buds will thank you.

If you have a grinder, try to grind your coffee right before brewing. You’ll notice a difference. Don’t worry if your grinder isn’t a $479 ceramic conical burr grinder. We used a manual burr grinder for a while before buying a lower-end burr grinder. But even if you’re using a push-button chopper to grind your coffee, doing it moments before will improve your coffee’s taste. That’s the great thing about coffee brewing. You can go as crazy or as not crazy as you like. We might err on the side of crazy. If you don’t have a grinder, don’t want a grinder, and don’t need a grinder, we’re happy to grind the beans for you. Just tell us in the notes how you’d like it ground (or what you’re going to brew it in if you want us to suggest a grind).

Oh, and if you’re looking for a water to coffee ratio, the Golden Ratio for Coffee is 17.42 units of water to 1 unit of coffee.  You should tweak this to your taste preferences. We tend to go with 17 to 1. Again, it’s a number to start you off.
